A listing here rests on one thing: on the date checked, the bakery’s own website said it sells biscotti — as page text, a product listing, or a product URL. It is a floor, not a census: many fine bakeries publish no menu online, and they are absent only for that reason. Listings are free, no bakery pays to appear, and no bakery saw its entry before publication. Where a site has since stopped responding we mark it website down and keep the listing — the earlier verification happened, and a dead server is not proof a bakery closed. When a bakery closes we mark it closed and leave it here, because a shop that fed a neighbourhood for a decade should not disappear from the record the week it locks the door. Where we have any ownership or commercial tie to a bakery we say so on its entry and take it out of our tastings — a directory listing is a fact, but a ranking is a judgment, and we will not put our thumb on one. Corrections are welcome and fast. Packaged supermarket brands are a different question and live in Le Marche.
