The first English-language atlas of Italy’s twice-baked traditions — every variety documented to its region, its dunking wine, and its papers. Built from Italian primary sources: regional product registers, producer histories, and a European legal specification that, as far as we can find, no English-language publication had read closely.

The taxonomy is the point. A bis-cotto in the literal sense is rarer than the word suggests — and knowing exactly which cookies earn the name is what separates a reference from a recipe blog.

The law says the protected cantuccino must contain butter. The archetype from Prato contains none.

We read the EU specification for Cantuccini Toscani IGP in the original — article by article — and published the first English annotation. Butter mandatory. Leavening mandatory. Second bake: optional. Every “authentic recipe” online stands on one side of a hundred-year argument, almost always without knowing it.
