Health check & link rot ops/check.py audits every build and, on demand, every outbound link. Its first run found three source citations that had 404ed; all three replaced with live equivalents. Done

Le Marche — the brand census Every packaged biscotti brand sold in America and every Italian house with a verified route to it, checked against each company's own site and graded A/B/C. Four findings: Mattei is not in the IGP consortium; only 7% of IGP production leaves the EU; the word has come loose from the thing; the top of the category is owned elsewhere. Done

Il Caffè — the dunk, documented Documento N.° VI. Cantucci in sweet wine is attested from 1647 — in moscato and malvasia, never vin santo. The wine's own legal text does not mention the biscuit. The famous dunking science was an advertising commission that never appeared as primary research. And 'twice-baked' is optional under the IGP. Done

Two towns, two cantucci Documento N.° VIII. Italy's register carries a cantuccio from Prato and, four rows down the same page, a cantuccio from San Miniato. Read side by side, the state's own product sheets say Prato bakes once and San Miniato bakes twice — and San Miniato's sheet argues the second bake is what earns the name. Done

The prose audit Every page read for the tells of machine writing and rewritten where it found them: the aphorism at the end of a paragraph, the same sentence shape opening five pages, three sentences duplicated word-for-word across the site, and a keeping-time field that phrased its sourcing identically fourteen times. What survived is what carries a consequence. Done

La Tavola degli Abbinamenti The pairing table: tell it what is in your cup and it names the biscotto, the reason, and the recipe. Fifteen documented styles against twenty-nine drinks, scored on seven shared axes you can inspect. Feast-day biscuits are weighted down for everyday drinks — a roccocò is not the answer to a Tuesday cappuccino. Profiles come from the published formulas, not from tasting, and the page says so. Le Occasioni — what to send and what to write Twenty occasions where a food gift is right and most people freeze: sympathy, a new neighbour, a client, a nurse, an apology. What is appropriate, three budget approaches, when it has to land, and 240 lines for the card. No brand is named and no link earns us anything — where buying is the answer it points at the Register's shippers, and where baking is the better answer it says so. Done

The Register, state by state Thirty-six state pages built from the Register itself — every bakery we have verified in that state, what it bakes, which ones ship, and the neighbouring states worth trying when nothing is close enough. Each page carries something no template could invent: the actual listings. Delaware points at Maryland, New Jersey and Pennsylvania; Hawaii points at nobody, which is the honest answer. Done

Discovery — IndexNow and the schema Google takes twelve URLs a day. IndexNow takes the whole sitemap in one call, and Bing's index is what ChatGPT search reads — so all 137 pages went to Bing, Yandex, Seznam and Naver at once, and ops/indexnow.py repeats it on every deploy. The Register also now declares itself as a Dataset in its structured data, because that is what it is. Done

SEO — the diagnosis, and the plan built on it Measured rather than assumed. Google had discovered four URLs of 103 and indexed one, and the 49 referring domains are spam inherited with an aged domain. The cause was findable: the sitemap index was read on 27 August and returned zero pages, and had not been re-read since. Submitting the child sitemap directly fixed it — 101 pages discovered the same day — and twelve pillar pages were pushed into the priority crawl queue by hand until Google's daily quota ran out. Internal linking repaired from 41 thin pages to 15, the pairing results made crawlable rather than JavaScript-only, and llms.txt published. Baking
