Gingerbread Biscotti
The December crossover — gingerbread’s spice rack folded into the twice-baked method. An American invention with no Italian passport, documented here because December bakes it anyway.
Gingerbread biscotti have no Italian ancestor. We say so and bake them anyway. The formula is the enriched camp’s: egg at 42% of the flour, butter at 25%, sugar dropped to 50% so the molasses can carry the sweetness and the colour both; they earn their place the way chocolate did, by being what American Decembers actually bake. The spice set is gingerbread’s own, not a pisto.
Documented, not yet sealed. The Tested 3× mark arrives with our own three bakes and their published notes.

Il metodo
Cream butter, sugar and molasses; beat in the eggs. Fold in flour, spices, baking powder and salt — the dough runs softer and stickier than an almond dough; the molasses does that.
Shape two logs with wet hands, 26 × 6 cm. Bake at 175°C / 350°F for 27 minutes.
Rest 20 minutes, then slice on the bias at 15 mm. Molasses dough slices cleanly but browns fast — watch the second bake.
Stand the slices and bake at 150°C / 300°F for about 16 minutes. The spice reads strongest on the second day; a molasses crumb never dries as hard as a lean one, and that is the style.
Two to three weeks. The spice deepens before the crumb tires.
