Perché funziona

The dried fruit holds water the second bake cannot remove, so this biscotto never reaches cantucci hardness — by design. Raw pistachios keep their green through both bakes; roasted ones go khaki. The orange zest is the hinge that makes fruit and nut read as one flavor.

Il sigillo

Documented, not yet sealed. The Tested 3× mark arrives with our own three bakes and their published notes.

Il metodo

1

Cream butter and sugar with the zest; beat in eggs. Fold in flour, baking powder and salt, then pistachios and cranberries.

2

Shape two logs, 26 × 6 cm. Bake at 175°C / 350°F for 27 minutes.

3

Rest 20 minutes. Slice on the bias at 15 mm — the cranberries drag on the knife, so saw gently.

4

Second bake at 150°C / 300°F for about 15 minutes. The fruit keeps the center slightly tender; that is correct for this style.

Keeps: Two weeks in a tin, by the published record — the fruit softens the crumb over time.
