Cranberry-Pistachio Biscotti
Red and green in one slice — the biscotto December invented. Pistachios appear in 29 of our verified bakeries, cranberries in 23, and nearly always together.
The dried fruit holds water the second bake cannot remove, so this biscotto never reaches cantucci hardness — by design. Raw pistachios keep their green through both bakes; roasted ones go khaki. The orange zest is the hinge that makes fruit and nut read as one flavor.

Cream butter and sugar with the zest; beat in eggs. Fold in flour, baking powder and salt, then pistachios and cranberries.
Shape two logs, 26 × 6 cm. Bake at 175°C / 350°F for 27 minutes.
Rest 20 minutes. Slice on the bias at 15 mm — the cranberries drag on the knife, so saw gently.
Second bake at 150°C / 300°F for about 15 minutes. The fruit keeps the center slightly tender; that is correct for this style.
