Lemon flavor lives in the zest oils, not the juice — sugar abrades them out better than any zester alone. The juice goes where acid can survive: the glaze. Glaze only fully cooled slices, or the second bake’s heat turns shine into syrup.

Rub the zest into the sugar until fragrant — this step is the recipe. Cream with butter, beat in eggs, fold in the dry ingredients.

Shape two logs. Bake at 175°C / 350°F for 26 minutes.

Rest 20 minutes. Slice at 15 mm; second bake at 150°C / 300°F for about 14 minutes.

Cool completely, then glaze: whisk icing sugar and lemon juice thick enough to hold a line, drag it across each slice, and let it set an hour before the tin.

Keeps: Ten days glazed, three weeks unglazed, by the published record.
